Recipe Idea – Almond Flour Chocolate Chip Cookies: Ingredients:

  • 2 cups almond flour
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1/4 cup melted coconut oil (or butter)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together almond flour, baking soda, and salt.
  3. In another bowl, mix the melted coconut oil, maple syrup, egg, and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry, then fold in the chocolate chips.
  5. Drop spoonfuls of dough onto the prepared baking sheet and flatten slightly.
  6. Bake for 10-12 minutes or until edges are golden brown.
