Brown sugar is derived similarly to white sugar from sugarcane or sugar beets. However, it retains some of the molasses either through incomplete removal during refining or by adding it back. This gives brown sugar its distinctive color and moisture content. Light brown sugar has less molasses, resulting in a lighter color and milder flavor, while dark brown sugar has more, offering a deeper color and stronger molasses flavor.
