The Recipe is created in the kitchen of CoffeeTalks Cafe.
It is a wonderfully customisable dish and can serve as both a main and a side.
The couscous can be replaced with Basmati Rice for a fuller side dish or Quinoa for a protein packed meal.
Ingredients:
Wholewheat CousCous / Basmati Rice / Quinoa
Fresh Herbs
Dates and Turkish Apricots
Almonds, Pumkin Seeds and Sunflower Seeds
Red Onion
Lemon Zest / Pickled Lemon skin
Method:
Soak the Couscous in boiling water. 1:1 ratio. Chop the herbs, Onion and dried fruit finely. Roast the Nuts and Seed mixture in a frying pan if not already roasted and then also chop finely. Grate the lemon for the zest or chop the pickled lemon skin finely if using. Mix everything together, add salt to taste and the juice of one lemon
