Ingredients:
Bulgar Wheat / Quinoa
Tomatos, Cucumber, Red Pepper, Red Onion
Parsley & Mint
Lemon
Olive Oil
Salt
What you need to do
- Cook the quinoa. Boil 1 part quinoa to 2 parts water until all the water is absorbed.
- Finely dice the vegetables and chop the fresh herbs, then add to the salad bowl.
- Squeeze in the lemon juice, drizzle with olive oil and season to taste with salt and pepper. Mix everything well until combined.
- Serves as a salad or side dish. Store covered and refrigerated for up to 3 days.
